Brazil

Our Brazilian breakfast centers on a traditional tapioca crepe filled with mortadella and cheese. Tapioca is the starch of cassava, a staple of the Amazon. The plate also includes chewy pão de queijo cheese bread made with tapioca, the superfood açaí, a tropical fruit salad, and goiabada guava paste paired with queijo Minas cheese. We also offered coxinha, Brazilian croquettes; pavê, a dessert introduced by Italian immigrants; and maté tea, sometimes called a drinkable salad, along with other Brazilian sides, desserts and drinks.

Brazil is a country of immigrants, where people with European, African, Asian and Indigenous roots live together. Its food culture is equally diverse, bringing dishes from around the world together with Indigenous traditions. In the Amazon rainforest, traditional foods include cassava, river fish, coconuts and tropical fruits. Growing interest in healthy eating has brought renewed attention to Amazonian cuisine both within Brazil and abroad.
