Bulgaria

Our Bulgarian breakfast plate featured banitsa, filo pastry rolled with spinach and sirene, the brined white cheese essential to Bulgarian cooking; mekitsi, fried dough made with yogurt; and sirene, fresh vegetables and salami, alongside yogurt with rose jam. We also offered Bulgarian sides, desserts and drinks, including pileshka supa, a comforting chicken soup made in home kitchens, baklava, a traditional pastry of the Middle East and Mediterranean, and ayran, a yogurt drink that pairs beautifully with banitsa.

Bulgaria is an Eastern European country on the Balkan Peninsula. Fertile land and a favorable climate make it one of Europe's important agricultural countries, with a varied cuisine centered on vegetables, dairy products, bread and meat. A cultural crossroads between Europe and Asia, Bulgaria shows strong culinary influences from neighbors such as Turkey and Greece, with minced meat and dairy products featuring prominently.
