Egypt

Our Egyptian breakfast plate combines the staple flatbread aish with ful medames, the much-loved slow-cooked fava bean dish; ta'ameya fritters topped with tahini sesame paste; gibna bi tomatem, a white cheese and tomato dip; colorful pickled eggplant called betengan mekhalel; and dukkah, an essential Egyptian spice mixture. We also offered molokhia soup and traditional desserts such as kunafa, which even appears in the Arabian Nights, along with other Egyptian sides and drinks.

More than 90% of Egypt is desert, and most of its population lives along the Nile, on just 5% of the country's land. As the ancient Greek historian Herodotus put it, Egypt is the gift of the Nile. The fertile soil created by the river's regular floods allowed Egypt to flourish from ancient times. The civilization that developed along the Nile from around 5000 BCE made advances in science and technology, including pyramids, hieroglyphs and a solar calendar.
