Finland

Our Finnish breakfast plate features karjalanpiirakka, rye-crust pies filled with milk porridge and topped with munavoi, an egg-and-butter spread. They are served with rosolli, a beet and potato salad dressed with sour cream, sautéed mushrooms including the chanterelles popular in Finland, and smoked salmon. We also offered hernekeitto, the pea soup traditionally eaten on Thursdays in the Nordic countries; the seasonal sweet buns laskiaispulla; and the classic spiced drink glögi, along with other Finnish sides and desserts.

Finland is a country of forests and lakes, with a third of its territory inside the Arctic Circle. Summer brings light late into the night, while winter days are mostly dark. Finns know how to make the most of their short summers and live comfortably through long winters. During the warmer months, they preserve fish, meat, vegetables and fruit as salted salmon, smoked fish, pickles, juices and jams, allowing them to enjoy these foods throughout the year.
