Georgia
Our Georgian breakfast plate pairs khachapuri, Georgia's signature cheese bread, with lobio, red kidney beans mixed with walnut paste, herbs and spices; a salad of tomatoes, cucumber, arugula and herbs; ajika, a versatile chili sauce; and matsoni, a fermented dairy product from the Caucasus.
We also offered khinkali, the region's distinctive soup-filled dumplings; Napoleon cake, named after the French historical figure; and orange wine made in unglazed clay vessels called qvevri, along with other Georgian sides, desserts and drinks.
Georgia lies south of the Caucasus Mountains at the boundary between Europe and Asia. As a key trading point on the Silk Road, it welcomed merchants and travelers from many countries, bringing ingredients, spices and cooking techniques that shaped a distinctive and diverse cuisine. Georgia is also known for its fine food, longevity and its place as a birthplace of winemaking.
