Lithuania

Our Lithuanian breakfast plate featured kugelis, an oven-baked grated potato pudding, with bacon and sour cream sauce; rye bread spread with homemade hemp-seed butter; buckwheat kasha; and a salad of beetroot, herring and pinto beans. We also offered Lithuanian sides, desserts and drinks, including a chilled pink soup made with beetroot and yogurt, a popular sweet nicknamed the lazy dessert, and gira, a traditional fermented drink made from dark bread and water.

Lithuania is a small country on the Baltic Sea with close historical ties to the Nordic countries, Germany and Poland. Following a period of Soviet occupation, it restored its independence in 1990. Located where Northern, Western and Central-Eastern European cultures meet, its cuisine has developed through a combination of local and neighboring traditions, shaped by geography, climate and history.
