Mexico

Our Mexican breakfast features huevos divorciados: tortillas topped with fried eggs and two vividly colored sauces, a traditional red salsa and a green tomatillo salsa. Frijoles, cooked beans that are then fried, join chorizo and guacamole on a plate bursting with color and flavor. We also offered cactus salad, chicharrón (crispy fried pork skin), tres leches cake—named for its three kinds of milk—and the tequila-based Paloma cocktail, along with other Mexican sides, desserts and drinks.

Located between the United States and Central America, Mexico is home to a rich mixture of cultures and a traditional cuisine unlike any other. Mexican cooking has two main roots: the Mesoamerican civilizations represented by the Maya and Aztecs, and the meat-based food traditions introduced through the Spanish conquest. It brings indigenous knowledge and techniques together with European culinary influences.
