Peru
In the morning, tamal sellers arrive outside bakeries with cane-woven baskets full of banana-leaf-wrapped corn parcels. People in Peru visit the bakery to buy freshly baked pan francés and tamales to take home. A classic Peruvian breakfast is a tamal alongside a pan francés sandwich filled with chicharrón—fatty pork that is first boiled, then fried—refreshing salsa criolla of red onion and cilantro, and slices of fried sweet potato.
Peru is home to the Nazca Lines and Machu Picchu, the mountain city of the once-flourishing Inca Empire. More recently, its rich mineral and marine resources have supported economic growth. The country has three very different environments: the coast, home to the capital Lima; the Andean highlands; and the tropical rainforest of the Amazon basin.
